Released in 2000, Simcoe is a unique, proprietary hop variety. Aromas are often described as woody and walnutty as well as passion fruit, pine, earthy and citrus. With alpha acids at 13.7%, Simcoe is a favourite for bittering in craft IPAs, and popularized by Russian River Brewing Company’s Pliny the Elder: an Imperial IPA. Simcoe has very low levels of cohumulone, lending excellent bitterness without that harsh, unpleasant bite. And with crazy-high levels of myrcene oils, Simcoe offers an intense, pungent aroma making it an excellent dual-use hop. If you’re looking for a single-hop IPA this summer, try Simcoe! never had a simcoe beer that tasted anything other than, or heard anyone describe simcoe as anything other than cat pee. Maybe mango, but thats a fine edge away from cat pee as well
The rampant popularity of that variety would suggest that there are many who would disagree. Or maybe those people just think that cat pee tastes great.

Never ever heard them described by anyone who has tasted them any other way. I know you we’re just fluffing them up for the article and that’s cool, but ignoring the cat peeness of them does no one any good
Simcoe Hops do not require “fluffing up”! Blame the brewer not the hop.
I guess I’m one of those folks who like cat pee. I did not know that.
